Yummy No-HeatAppetizer Kabobs

Summer cookouts are one of the best ways to enjoy the warmer weather and longer hours of daylight! While we all go crazy for hotdogs and hamburgers on the grill, it’s nice to have a couple of options that don’t require cooking, and that offer the perfect flavor combinations in each bite! These two recipes for no-heat skewers are so simple and straightforward that you can make them ahead of time so you can focus on enjoying the BBQ along with your guests. No Heat Kabobs - The Kissters

Watermelon Feta Skewers

Ingredients:

12 wooden skewers

1/4 medium seedless watermelon, cut into 12 one-inch cubes

12 one-inch cubes of firm feta cheese

12 pitted Kalamata olives

12 small fresh basil leaves

2 tablespoons Extra-Virgin olive oil

1 teaspoon honey

1 tablespoon Balsamic vinegar

Pinch of kosher salt and ground black pepper

Directions:

After prepping the watermelon and feta, slide each ingredient onto the bottom of the skewer as follows: watermelon, feta, basil, topped with an olive. In a small bowl, whisk together the olive oil, honey, and balsamic vinegar and pour overtop the skewers. Finish with salt and pepper.

Makes: 12 Skewers

 

Tomato Basil Mozzarella Skewers

Ingredients:

12 washed cherry tomatoes

12 small mozzarella balls

12 small pieces of basil

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Pinch of kosher salt and ground black pepper

Directions:

Cut the bottom of each mozzarella ball so that it makes a flat surface. Discard extra cheese (or eat it if you’re like us.) From bottom to top, place cheese flat side down, basil leaf, and tomato. Drizzle with olive oil and vinegar, finishing with a sprinkle of salt and pepper.

Makes: 12 Skewers
