The "I Don't Cook" Breakfast of Champions

So if you ask any one of my family members or friends they will tell you that I don't  cook. I mean, not anything of substance. (Does popcorn count?) Lately I have enjoyed being in the kitchen just a little bit more. Maybe it's the FREEZING cold weather here in NYC but it's been lovely to stay indoors as much as humanly possible! Also I think I would feel way too bad making the delivery guys pedal and trek in this slushy mess!


Eggs and sautéed spinach.


This is my new favorite weekend breakfast/brunch I eat every single Saturday and Sunday! It's so simple I almost can't believe it.

First I crack 2 eggs in a bowl and whisk them together. I add just a splash of milk:


Then I cut up a few pieces of cheese into little pieces:


Then I just scramble the eggs with the cheese (On low to medium heat)!



Off to the side I sauté a bunch of spinach (on LOW heat) in just a little bit of olive oil:



Then I salt and pepper to taste (I use a lot of salt and pepper btw-WHOOPS)...

This is the easiest quickest breakfast EVER. I honestly think it takes me less than 5 minutes from start to finish- lucky that spinach and eggs cook so fast, huh!?

This is coming from someone that used to be afraid to scramble an egg. This totally beats just a banana!
